1. Blanch the green beans in salted water for 5 minutes, then plunge into iced water to keep their colour.
2. Slice half the onion into thin rings, dust with flour and fry in hot oil until crisp. Drain on kitchen paper.
3. Finely chop the remaining onion and fry it in the butter with the sliced mushrooms.
4. Sprinkle over the flour, pour in the cream and cook into a thick sauce.
5. Fold in the beans, season with salt and pepper, and tip into a baking dish.
6. Bake at 190°C for 20 minutes, then scatter the crisp onion rings over to serve.
