1. Peel and core the apples and cut them into cubes.
2. Toss immediately with the lemon juice so they do not brown.
3. Slice the celery thinly and roughly chop the walnuts.
4. For the dressing, mix the mayonnaise with the Greek yogurt, a pinch of salt and pepper.
5. Fold the apple, celery, walnuts and raisins gently through the dressing.
6. Pile onto lettuce leaves, scatter with a few extra walnuts and serve cold.
Tip: Created at the Waldorf Hotel in New York in 1896. The yogurt lightens the classic – originally it was made with mayonnaise alone.
