1. Heat the oven to 200°C and put a cast iron skillet or tin inside with half the butter to get hot.
2. Mix the cornmeal with the flour, baking powder, sugar and salt.
3. Separately whisk the eggs, milk and the remaining melted butter.
4. Pour the wet into the dry and mix quickly, just until combined.
5. Pour the batter into the hot, greased pan – it should sizzle.
6. Bake for 20-25 minutes until golden on top. Serve warm with butter.
