1. Peel the sweet potatoes and cut them into even, finger-thick batons.
2. Soak in cold water for 20 minutes to draw out the starch, then dry completely on a tea towel.
3. Dust with a little flour to help them crisp.
4. Toss thoroughly with the oil, smoked paprika, salt and pepper.
5. Spread on a lined tray in a SINGLE layer, well separated – this matters most.
6. Roast at 220°C for 25-30 minutes, turning halfway.
