1. Sieve the curd cheese and mix with the semolina, egg, flour and salt.
2. Rest the mixture for 30 minutes so the semolina swells.
3. Shape dumplings with wet hands.
4. Cook in plenty of gently simmering salted water for 12–15 minutes.
5. Toast the breadcrumbs in the butter until golden.
6. Roll the cooked dumplings in the toasted crumbs.
7. Serve with sour cream and icing sugar.
Tip: Without resting the mixture the dumplings fall apart.
