1. Strip the husks and silk from the corn cobs.
2. Boil in lightly salted water for 8-10 minutes – fresh corn softens faster.
3. Meanwhile mash the soft butter with the smoked paprika, finely chopped parsley and a pinch of salt.
4. Drain the cobs and pat them dry.
5. Char on a hot griddle pan or barbecue for 2 minutes per side until spotted brown.
6. Slather with the seasoned butter and finish with freshly ground pepper.
Tip: Never salt the water heavily at the start – too much salt toughens the kernels. A staple of American cookouts.
