1. For the crackers, mix the flour, brown sugar and a pinch of salt, then rub in the cold butter.
2. Bring together into a dough with the honey and 1-2 tablespoons of cold water, then chill for 30 minutes.
3. Roll out thinly, cut into squares, prick with a fork and bake at 180°C for 10-12 minutes until crisp. Cool.
4. Toast the marshmallows on a skewer over an open flame (barbecue, campfire) until golden, turning so they do not burn.
5. Put a square of dark chocolate on one cracker and the hot marshmallow on top.
6. Cover with a second cracker and press gently – the hot marshmallow melts the chocolate.
