1. Melt the dark chocolate with the butter slowly over a bain-marie – the water must NEVER touch the bottom of the bowl.
2. Take off the heat and stir in the honey to keep it glossy.
3. Let it cool for 5 minutes – added to a too-hot mixture the marshmallows simply melt away.
4. Fold in the roughly chopped walnuts, the raisins and the halved marshmallows.
5. Press into a lined tin, flattening with the back of a spoon.
6. Chill for at least 3 hours, then cut into squares with a sharp knife.
Tip: No baking required. The marshmallows must stay whole in the set slab – that lumpy surface is what gives it the name.
